Any item identified or labeled as "foie gras" is presumed to be a force-fed product, with the burden on the seller to prove otherwise. Violations incur a civil penalty of $500 per violation, with fines retained by the municipality or department of health after trial costs. The law takes effect on January 1, 2027.
