Illinois SB1288 mandates food handler training on celiac disease and gluten-free food handling.

Illinois SB1288 amends the Food Handling Regulation Enforcement Act to require all food handlers to complete a training program on celiac disease and the safe handling of gluten-free foods. The training covers the nature and symptoms of celiac disease, the importance of gluten-free food handling, methods to prevent cross-contamination, proper cleaning and sanitizing procedures, and the labeling and identification of gluten-free products. This training applies to all food handlers, regardless of employment by a restaurant.
